The Deen Bros. Lighter Sweet and Sour Meatballs

By Bobby and Jamie Deen

Lighter Sweet and Sour Meatballs

238 Fewer Calories
12 g Less Fat

1 pound lean ground turkey
1/4 cup plain dry bread crumbs
1 large egg, lightly beaten
1 shallot, finely chopped
1 tablespoon grated peeled fresh ginger
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon Chinese five-spice powder or ground allspice
2 teaspoons canola oil
2 (8-ounce) cans pineapple chunks, drained, liquid reserved
1/2 cup water
3 tablespoons ketchup
3 tablespoons apple cider vinegar
3 tablespoons packed light brown sugar
1 red bell pepper, cut into 1/2-inch pieces
3 scallions, thinly sliced

Mix together the turkey, bread crumbs, egg, shallot, ginger, garlic, salt, and five-spice powder until thoroughly combined. With damp hands, shape the mixture into 24 (11/2-inch) balls.

Heat the oil in a large nonstick skillet over medium-high heat. Add the meatballs and cook, turning until browned on all sides, about 5 minutes. Transfer to a plate. Wipe the skillet clean.

Add the reserved pineapple liquid, water, ketchup, vinegar, and brown sugar to the skillet; bring to a boil. Add the meatballs and bell pepper to the skillet. Reduce the heat, cover and simmer, stirring gently once or twice, until the meatballs are cooked through and the bell pepper is tender-crisp, 6 – 8 minutes. Gently stir in the pineapple chunks and scallions; heat through.

We hope to visit Savannah, Georgis March of 2012. We plan on visiting and having a meal at The Lady and Sons restaurant. Is there any chance we might see Paula there. What dates if so? Thanks! Connie Armer

You are great. I have been thinking at the age of 50 on how to get started on a journey on cooking food. I am just started working on a cook book for my family for Christmas next year. If you want to give it a try, I make these awesome wraps. I think you will enjoy them. Thank you Blakie Vance Funches

Dear Paula, I refer to the unjust and cruel attacks and criticism of you, regarding you diabetes. First it none of their business or concern. You are free with your privacy. Now we can turn the tables against them. If you are interested, I shall send you my protocol for arresting weight gain, and obesity, and therefore better management, and preventing weight gain, and obesity, and after that weight loss. There is nothing to sell, all you have to do, after trying it (along with Oprah,Kirsty Alley, and any number of people you wish to participate) and verifiying it, is credit this protocol to me, and it is a gift to humanity. The logic is there. It is not what you eat or how much, you still can succeed in combating weight=gain and obesity. one of the main causes of developing diabetes is liver and pancreas fat. If that is arrested you prevent developing diabetes for those that did not develop yet, and see how many millions worldwide can be helped. If you are interested I shall send you the detailed protocol, so you and the a.m. persons can review, and broadcast it to the world. Awaiting to hear from you soon, meanwhile best regards. I am really glad that you are giving the calories, fat and sodium content on some of these dishes and are making them lighter without taking away the flavor. Cannot wait to try the meatballs!
