Lighter Strawberry Rhubarb-Ginger Crisp

Ingredients:
Topping
3/4 cup rolled oats
1/4 cup all-purpose flour
3 tablespoons packed brown sugar
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 tablespoon butter, cut into small pieces
1 tablespoons canola oil
Filling
1 pound fresh rhubarb, trimmed and cut into cut into 1/2-inch pieces
2 cups strawberries, hulled and sliced
1/2 cup granulated sugar
1 – 2 tablespoons cornstarch
1 tablespoon grated peeled fresh ginger
1/2 teaspoon ground cinnamon
Directions
Preheat the oven to 375°F. Spray a 1 1/2 – quart baking dish with cooking spray.
To make the topping, combine the oats, flour, brown sugar, cinnamon, and salt in a medium bowl. With your fingers, mix in the butter and oil until the mixture is crumbly; set aside.
To make the filling, combine the rhubarb, strawberries, granulated sugar, cornstarch, ginger, and cinnamon in a large bowl until well mixed. Spoon the filling into the baking dish. Sprinkle the topping evenly over filling. Bake until the filling is bubbly and the topping is lightly browned,
45 – 50 minutes. Serve warm or at room temperature.

I began smoking when I was 14 or 15. I am now cigarette free for over 30 years. I know your fears and your inability to quit this addiction. It's been a part of you for so long that you can't do without it. To give up my cigarettes was like giving up eating ... or, so I thought. When I was tired I'd have a cigarette. When I needed a pick-me up I'd have a cigarette. If I was Hungary I'd have a cigarette. When I ate or drank something I'd have a cigarette. There are all kinds of triggers that causes the desire for a cigarette. However, there isn't anything in this world that can accommodate all of these triggers. It is very complex because it's part addiction and part habit. Do yourself a favor and look up SmokEnders dot com. They will teach you how to quit. It is expensive (or it was for me), but that is part of it. If it was free you probably wouldn't do the program. I wanted to get my monies worth so I followed it to the degree. I was free from that ball and chain in four weeks. I knew smoking was killing me but I was afraid if I quit I would still have the desire (or craving) to smoke. I promise, you will not be sorry. You will be so glad to get rid of that noose around your neck. I am not affiliated with the company in any way. I'm just a fellow ex-cigarette smoker wanting to help.
