The Deen Bros. Lighter Slow Cooker Stuffed Peppers

Ingredients:
1 tablespoon olive oil
1 onion, finely chopped
1 small zucchini, grated
2 garlic cloves, minced
3/4 pound ground lean turkey breast
1 1/2 cups cooked brown rice
1/2 cup reduced-fat shredded Cheddar cheese
1/2 teaspoon salt
4 medium green, red, or yellow bell peppers
1 (24-ounce) jar marinara sauce
Directions:
Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, zucchini, and garlic and cook, stirring occasionally, until tender, about 8 minutes. Transfer the onion mixture to a large bowl; let cool slightly.
Add the turkey, rice, cheese, and salt; mix well to combine. Cut the tops off of the bell peppers; discard seeds and membranes. Spoon the turkey mixture into each pepper. Transfer the peppers, cut-side up, to a 5 1/2-quart slow cooker. Pour the sauce over the peppers and cook, covered, until the peppers are fork-tender, 3 – 4 hours on High or 4 – 6 hours on Low.

I wasn't paying attention at the store and bought turkey sausage instead of plain ground turkey...sooooo glad I did! I made these today using the sausage and they are DELICIOUS! Also, recipe didn't specify whether to leave meat raw or precook, so I cooked it.

Hi, I love your show and all your recipes and love that your sons have some lighter recipes. I have a problem that I hope you can help me with. I've found out the reason for being so ill is allergy to milk and egg. Can you think of a worse combination? Anyway, egg is used so much to bind ingredients together but I can't use eggs nor cheese. Can you give me some suggestions or recipes unfortuneatly I love cheese and eggs, italian food and breakfast but duh, i can't have them anymore. please help, JO

Ms. Paula, I am a huge fan. I love watching you on t.v. I was diagnosed with kidney and thyroid cancer last year. I have always wanted to meet you. I live alone and have difficulties standing and have to cook and things like that. I just wanted you to know that you are the best and that I do wish that one day that I will be able to meet you and your two sons.
