The Deen Bros. Lighter Lemon-Blueberry Jam

The Deen Bros. Lighter Lemon-Blueberry Jam

Ingredients:
4 cups blueberries
1 (1 3/4-oz) package powdered low-sugar fruit pectin
1 3/4 cups sugar
Zest and juice of 1 lemon
1 tablespoon grated peeled fresh ginger

Directions:
Prepare four (1/2-pint) jars with lids and bands according to manufacturer’s directions.

Coarsely mash the blueberries with a vegetable masher in a large saucepan. Stir in the pectin and 1/4 cup sugar and bring to a boil. Stir in the remaining sugar, lemon zest, lemon juice, and ginger until blended. Return the mixture to a rolling boil and cook, stirring constantly, for 1 minute.  Remove from the heat; skim off any foam and cool to room temperature. 

Spoon the jam into the prepared jars to within 1/2-inch from the tops. Wipe the jars and rims clean and cover tightly with lids. Let stand at room temperature until set, about 24 hours. Chill up to 3 weeks or freeze in plastic containers for up to 1 year.

Paula: My aunt use to make a cake called Russian Tea Loaf. Made in a cake pan. It consist of alot of eggs,cake flour. It was kinda like a pound cake. We used some of the eggs for the frosting. Did you ever hear of it. She has now pasted. Hope you can help me out. Thanks Linda I kinda have some of the ingred. but not sure how to do it ...

I am so trying this, thank you boys for making these lighter recipes, i love Paulas cooking have several of her cook books and 1 of yours, but am really trying to keep the pounds off, so this blueberry jam sounds just wonderful, am gonna print this out and give her and whirl asap!

Love blueberry jam and this sounds really good. i will try this. I would like for you to try my Pear Honey recipe. 4 cups ground pears 4 cups sugar 1 (15 1/4 oz) can crushed pineapple drained. 1/2 box of Certo Mix all ingredients together except certo. cook 30 minutes remove from heat and add certo. mix well and ladel into clean hot jars and seal. Awesome on hot buttered biscuits or toast.

Can you put these in a boiling water bath for 10 minutes like you do regular jam? Or is this just for freezer jam? Looks wonderful!
