The Deen Bros. Lighter Chicken Florentine

Ingredients:
4 (5-ounce) skinless boneless chicken breasts
1/2 teaspoon coarse salt
1/4 teaspoon fresh ground pepper
2 teaspoons olive oil
1/2 pound shiitake mushrooms, stems removed, caps sliced
2 shallots, thinly sliced
2 garlic cloves, minced
1 (5-ounce) container baby spinach
1 tablespoon all-purpose flour
1 cup fat-free milk
Pinch ground nutmeg
1/2 cup reduced-fat shredded Jarlsberg or Swiss cheese

Directions:
Preheat the oven to 425°F. Spray a medium baking dish with cooking spray.

Spray a large nonstick skillet with cooking spray and set over medium-high heat. Sprinkle the chicken with 1/4 teaspoon salt and the pepper. Add the chicken to the skillet and cook until browned, about 6 minutes. Transfer the chicken in one layer to the baking dish.

Add the oil to the skillet along with the mushrooms, shallots, and garlic. Cook, stirring frequently, until the mushrooms are tender, about 8 minutes. Add the spinach and cook, stirring occasionally, until the spinach is wilted, about 3 minutes.

Whisk together the flour with 2 tablespoons of the milk in a 2-cup glass measure until smooth. Stir in the remaining milk, the remaining 1/4 teaspoon salt, and nutmeg until blended. Add the milk mixture to the spinach mixture in the skillet, and cook, stirring frequently, until the mixture bubbles and begins to thicken slightly, about 2 minutes. Pour the sauce evenly over the chicken. Sprinkle evenly with the cheese.

Bake, uncovered, until bubbly around the edges and the cheese is melted, about 10 minutes.

OMG! this was fantastic! Though my hubz gave me a funny look with all the spinach, he was a fan after his first bite. I highly recommend this, the chicken turns out juicy and the sauce isn't heavy. we served with a simple side of broccoli (forgot to cook anything else), should have included some brown/wild rice or something. definitely in the recipe box for future use.

I should probably know this but do you have a cook book with this type of recipes ? Also sorry the media tried to "take your mom down" because of her diabetes. That is their favorite thing. Build you up and the. Try to destroy you when you make it. I enjoy Paula and sons on TV wish I was that at ease cooking. Thirty-seven+ years of marriage and I'm still lost but enjoy watching great cooks at work.

I love these lighter recipes!! I have recently started Weight Watchers as have a lot of other people. Using their point system is easy. I was wondering if it would be possible that in addition to the nutritional information, could you list the number of points in a serving? It would make it so much easier to choose what will be prepared for a meal. Thank you!

I love watching your mom and I really watching you guys Bobbi and Jamie, I have a questions for you guys do you have any recipe's that are for people who are lactose intolerant. I personally can not have any kind of cheese in my meals and I love it and miss it a lot! I omit the cheese in the recipes but does not taste as good. I have not been able to find anything that would be really good. I was wondering if you have suggestions on what I can do for a good recipe! If you have any ideas or suggestions that would be awesome. Thank you, Bonnie
