The Deen Bros. Lighter Chicken and Dumplings

Ingredients:
8 skinless boneless chicken thighs, trimmed of all fat
1/2 teaspoon salt
2 teaspoons canola oil
1 vidalia onion, chopped
1/2 pound cremini mushrooms, sliced
2 carrots, chopped
2 celery ribs, chopped
2 tablespoons all-purpose flour
3 cups reduced-sodium chicken broth
1 cup frozen peas
1 2/3 cup reduced-fat buttermilk baking mix (Bisquick)
2/3 cup fat-free milk
1 tablespoon chopped fresh parsley
Sprinkle the chicken with the salt. Heat the oil in a nonstick Dutch oven over medium-high heat. Add the chicken and cook, turning occasionally, until browned, about 5 minutes.
Transfer the chicken to a plate.
Add the onion, mushrooms, carrots, and celery to the Dutch oven. Cook, stirring occasionally, until the vegetables begin to soften and brown lightly, about 8 minutes. Stir in the flour and cook, stirring constantly, 1 minute. Return the chicken and any of its juices to the Dutch oven. Add the broth; bring to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 15 minutes. Stir in the peas.
Meanwhile, to prepare the dumplings, combine the baking mix, milk, and parsley in a medium bowl until a soft dough forms.
Drop the dough, by tablespoons onto the simmering stew. Reduce the heat and simmer, uncovered, 10 minutes. Cover and simmer until the dumplings have doubled in size and are cooked through, about 10 minutes longer.

I love all of the light recipes for a diabetic thanks Bobby only problem that I am having is that I have to count my carb and you have that for each recipe but I don't know what the serving size is a cup or half cup or what? Thanks so much. Bobby I know that your Mom is proud of her two boys and I know that you boys or young men are very proud of your wonderful Mother you are awesome Paula.

Do you have to use chicken thighs??? I usually buy boneless, skinless chicken breast. But I would buy them with the skin & bone on. Just wondering!

Thanks for the GREAT recipe guys! My chicken and dumplings are the drop variety. Paula's recipe is what I call chicken and pastry. One other type is a drop version using a combination of flour and cornmeal. Any way you cook C&D, it is fantastic! Anyone should know cutting the fat will make each version more health and heart friendly! Jamie and Bobby are doing a wonderful credit to their Mom revising the recipes a bit lighter for those who choose to prepeare the dishes in this manner. Take care and Thank y'all!!!

The dumplings ARE rolled in the picture because it's a picture of her original, not lighter, chicken and dumplings. If you want the rolled one's just follow the original recipe!!!!!

With reference to the question of why the picture shows "rolled dough dumplings" rather than the drop dumplings in the lighter version . . . I think the picture indicates "A Paula Original Recipe" - made lighter if using the revised recipe below the picture - which defers to the lower fat ingredients. I don't think it was meant to be deceiving - just two different options from which to choose. Paula's recipes are "original, southern cooking" with lots of flavor and fat - but when used in moderation, unless on a restricted diet, we can all enjoy occasionally or for special occasions.

Paula, Your boys have done a really good job on ths dish. All the people that have an issue with the way the dish looks is because it is Paula's version and not the boys. It is not a picture of the Deen brothers dish it is the original picture of Paula's Chicken and Dumplings which they revised.... The picture in this story caught my eye so I looked at the recipe. The dumplings look "rolled out" which is the way my Mom made them when I was growing up. BUT, the recipe say drop dough from a teaspoon into the liquid and cook until they double in size. There's no way that picture is of the listed recipe. I was very disappointed by this fact!!

Paula, at the Dollar Tree dollar store I was going to buy your cake mix,for my birthday in June,but then when I went back to buy it,there was none of your cake mixes left there. Please get more in the dollar tree dollar stores,& other stores. Also I saw some of your sauces in AJ's Fine Foods,and I am going to buy your sauce. Yeah we need to listen to Dr. Oz and eat food that taste good and is healthier. Please take your own sons advice & recipe and make the chicken and dumplings lighter,without the fat. Also try artificial meat more often,soy is really very good for your health,don't believe people you say that it's not. Soy is good for your mind,your bones,and it gives you isoflavones that your body needs. Therefore,try the soy meatless meatballs with your spaghettii,& look for whole wheat,& whole grain spaghetti with flax,also look for & get & take flax in capsules that is at Walgreens & other stores,as Flax & ginger softens your stools and helps your overall health. Please do these things Paula because I saw you on Rachel Ray show today,and I admire you. And I pray God that we will meet and talk soon.
