The sun is shining, the chill is finally gone from the air, and the market is filled to the brim with crisp and colorful springtime vegetables. What better way to enjoy earth’s bounty than with a yummy fresh salad? Try these suggestions out for your next dinner.

Spinach and strawberries are a match made in food heaven. The strawberries shine like a bright jewel in a tangle of greens. We love the surprising crunch and flavor of the hearts of palm. This salad is special enough to serve to company or easy enough to have during the week.

This crunchy and refreshing salad hits the spot. Asparagus is in peak season right now so get it while the gettins’ hot! This colorful salad is a perfect side for your first springtime barbecue.

Rhubarb is just popping up in our markets now. Did you know rhubarb’s growing season goes hand in hand with strawberry season? They are the perfect pair (especially in this dressing!). Try this sweet and tangy dressing over a big of bowl of mixed greens and you wont be disappointed. The pretty color is worth it alone!
