Sensational Summer Salads

By The Paula Deen Test Kitchen

Salads are truly the ultimate food of summer.  There are so many reasons that salads are the dish of the season.  Produce is in abundance, and we all know eating fruits and vegetables when they are in season makes them that much more irresistible.  Spinach, corn, green beans, berries, cucumbers, peaches, tomatoes and okra are just a few things that are at their peak in summertime.  Salads also make an easy, quick and simple meal on those evenings when we would rather be outside and not in the kitchen.  They are light, healthy, and most importantly cool for those hot nights when you don’t want to turn on the stove and can’t imagine eating something warm.  Use the list of recipes below as your ultimate summer salad guide!

Salads are no longer simply a dish or an afterthought to accompany the rest of your meal.  Try one of Paula’s hearty salads as an easy and healthy main course:

South Western Avocado and Black Bean Salad
Vidalia Onion and Lump Blue Crab Salad
Blueberry and Grilled Chicken Salad
Black-Eyed Pea Greek Salad
Grilled Vegetable Pasta Salad
Spinach and Strawberry Salad

Whether you are barbequing outside or simply looking for a healthy way to work vegetables into your meal, try one of these flavor-filled side salad:

Corn and Asparagus Salad
Grilled Peach Salad
New Potato and Green Bean Salad
7-Layer Salad
Aunt Peggy’s Cucumber, Tomato, and Onion Salad
Peach Pecan Iceberg Wedges

And who would have thought, salad for dessert?  Absolutely! There is nothing sweeter or more decadent then fresh in-season summer fruit.  Try one of these light and healthy fruit desserts recipes:

Fresh Fruit Salad with Creamy Custard
Fresh Fruit Salad with Lime-Ginger Honey Dressing
Fresh Fruit Salad with Cream Cheese Pecan Topping
Watermelon Salad with Mint Leaves

Glad to see the update/revised website, the past couple weeks have been difficult to use. Congratulations Paula for getting back on your feet and moving forward. I enjoyed watching you on TV, although the butter was a bit much! Glad to see you are slimming down your recipes. Best wishes from my kitchen to yours! Jeanine

I'll always support your efforts. I have stopped watching the Food Network shows since you have been taken off. I'm also not supporting any business that has pulled your products off their shelves. Jesus said "He who is without sin cast the first stone". I'm sorry our country is full of finger pointers (who should remember that they have 3 fingers pointing back to themselves). Everyone said what you did 25-30 years ago. You can't be punished now for what happened in the past. I did it. Now my next door neighbor is a fine black lady who is widowed. I look after her house when she is gone. I worked for her late husband who was the best boss I ever had who just happened to be black. If another network picks up your show I will watch it and predict that it will have higher ratings than before.
