Savoring Summer’s Harvest: How to Freeze Herbs

By The Paula Deen Test Kitchen

Paula learned a new cooking trick we thought we would share! With the test kitchen summer herb garden growing in full force, Paula decided she would freeze some of her herbs this year to savor them all year long.

The results are these neat herb olive oil cubes. Wondering how we’ve been using them? Well just throw one into a hot skillet and let the cube melt. While the oil warms, the herbs infuse the oil leaving a delicious fresh flavor.

We’ve had good results making a simple summery sauce by combining halved cherry tomatoes with the hot herb oil in a skillet, stirring together over medium heat until saucy, then tossing through with spaghetti. We’re licking our lips just thinking about it!

Follow our how-to and make your own!

imageStep 1: Gather your materials. For this project you’ll need a mess of fresh herbs (we used a combination of rosemary, tarragon, thyme, sage, and parsley), olive oil, and an ice cube tray.
imageStep 2: Roughly chop the herbs.

imageStep 3: Fill each ice cube compartment halfway with herbs.

imageStep 4: Cover the herbs with olive oil.

image Step 5: Freeze until solid, then remove the cubes from the ice cube tray, and place in dated freezer bags and place back into the freezer until ready to use.

Paula, Would like to see more canning books and sewing books from you. My daughter and I are canning, freezing and drying more foods for the long haul. With prices going up on grocery items she needs to know how, I am passing along what I was shown by my grandma. I am also showing her how to sew and patch, no more toss away items, we give or donate items now. The grand kids are catching on.

I have always loved your recipes and your family. I can't buy anything but I am behind you in anything and everything you do. I did buy a pair of your eyeglass frames last year at walmart for my glasses I wear. Thanks for everything you have done and will do. You have beautiful kids and beautiful and adorable grandkids.
