Ingredients:
1 cup quinoa
2 cups water
1 (15-ounce) can black-eyed peas, rinsed and drained
1 red bell pepper, finely chopped
2 celery ribs, thinly sliced
1/4 cup chopped fresh cilantro
3 scallions, thinly sliced
Juice of 1 lemon
1 tablespoon olive oil
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground cumin
3 slices cooked-crisp bacon, coarsely chopped
Directions:
Bring the quinoa and water to a boil in a medium saucepan. Reduce the heat and simmer, covered, until most of the water is absorbed and the quinoa is tender, 15 – 20 minutes. Drain; rinse under cold running water and drain again. Transfer to a large bowl. Add the black-eyed peas, bell pepper, celery, cilantro, and scallions.
Whisk together the lemon juice, olive oil, mustard, salt, and cumin in a small bowl. Add to the quinoa mixture, tossing to mix well. Sprinkle with the bacon just before serving.

The food in the picture (Quinoa Hoppin' John) looked delicious, however the recipe did not match the picture. The picture appears to have rice, blackeyed peas, baby lima beans, corn, etc. The recipe calls for quinoa and blackeyed peas and cilantro. Is there a recipe for the dish in the picture?

Love your recipes. However, have 1 gripe. Looking at pic of Quinoa Hoppin John here and I see butter beans and corn in the pic to name at least 2 items that are NOT in the recipe. Please don't make us disappointed when we realize too late that ours is not gonna look like your pic because it is not in Your recipe! Thanks and keep those recipes coming!

Would like to thank all of you for giving us many choices on how to cook and bake.Paula,my daughter drove me from Michigan to Indianapolis just to see you snow and all..What a wonderful time we had. Didn't know about the greeting and signing session. Is there a chance that you could come to Michigan? It really would make my day. I really like this quinoa recipe. I was looking over this latest receipe Quinoa Hoppin John, but the picture doesn't match the receipe. In the picture I see butter beans and corn, but nothing is mentioned about it in the receipe. Is this the correct receipe for this?
