Paula’s Perfect Potatoes

I’ve always said that if I had to choose one food to take with me to a deserted island, it would be a potato. I just love ‘em! Then inevitably, Michael chimes in and says, “Yeah, and I’d bring a boat so that I could pick her and her potato up off the island!” What can I say? I’d be lost without that man.

Versatile Spuds
But back to my love for the potato. To me, potatoes are like the blank canvas of the cooking world. Whether mashed, baked, fried, or whipped up with mayonnaise and served in a salad, potatoes are one of the most comforting foods I know. There’s something so reassuringly simple and Southern about them. Did you know that you can even save an over-salted dish with a potato?

Meat and Potatoes
As for Michael, he’s a tried and true meat and potatoes kinda guy. The way to his heart is with a good, hearty cut of meat, served with a helping of potatoes and one other veggie. He and I love these Deluxe Twice Baked Potatoes with Shrimp. And Sunday supper? You can bet there’s always going to be a potato dish in some form at my table, like Smashed Potato Cakes!

Perfect Mashed Potatoes
At The Lady & Sons, our mashed potatoes is one of our most popular dishes. It’s hard to keep it on the buffet because it’s gone almost as soon as we serve it! We only use nice, red potatoes. To me, they make a better mashed potato than your typical russet potato, but it’s really all about your preference. One secret that I’ll share is that I always leave the skins on. Now that’s not just me being lazy, but the skins hold so many nutrients and they add a whole different layer of texture.

A Sweet Surprise
During the holiday season, one the things I look forward to the most is making Sweet Potato Balls with my dear Aunt Peggy. We have such a hoot cuttin’ up and cooking together. Now most folks make a sweet potato soufflé, but y’all, these sweet potato balls are outta this world, and they’re an unexpected twist that I guarantee your family and guests will love time and time again.

do you have a recipe for baked sweet potatoes sliced with brown sugar butter and what else that is where I am stuck. I don't want to mash the potatoes. thank you love your many ideas and cookware

Paula, i love your show. you are so up beat all the time and you make cooking a blast. i make potatoes alot and trying to find new ways to make them. i am going thru your recipes to see what kind i can make. i have some picky eaters including me lol. thanks so much for the fun you put in the cooking show.

i just love you paula. i watch your show as much as i can. i love the way you cook except when you use sour cream. i hate that stuff. but your use of butter is awesome. the more butter the better. i also love the show when you have your boys on. they are very good looking guys and seem to love cooking as much as you do. thank you for all the good ideas with the potato. i could not find the potato soup with shrimp. i would love to try that. thank you and keep on cooking dorothy

We make Chicken Bog ALL the time, especially in the fall & winter. It's also a great dish to make when camping. I'm wanting to make it with brown rice but don't know if the amount of liquid needs to be different & how long the rice needs to cook. Thanks!

You are so right about the potato Paula! It is every cooks best friend!! My family makes a dish we call "Fiesta Potatos". We make taco meat... using whatever protein you prefer. For a quick week night dinner we just use ground beef, (we have also used ground turkey) chili powder, cumin, garlic, salt and pepper to taste. When its done, add just a touch of cooking liquid, again your choice. Anything from water to broth. Just enough to make the meat nice and moist. Simmer for a bit and you are ready to go. Slice the potato as you would for a baked potato, add the meat and load on the taco fixin's. We use cheese, green onion, sour cream, olives and whatever salsa of choice. It is a FANTASTIC meal. My mom started making it for us when we were kids because one night she got all the ingredients ready to make tacos and realized she did not have tortillas. It has been a family staple ever since. We love you Paula! Keep on cookin'!!
