I’ve always said that if I had to choose one food to take with me to a deserted island, it would be a potato. I just love ‘em! Then inevitably, Michael chimes in and says, “Yeah, and I’d bring a boat so that I could pick her and her potato up off the island!” What can I say? I’d be lost without that man.
But back to my love for the potato. To me, potatoes are like the blank canvas of the cooking world. Whether mashed, baked, fried, or whipped up with mayonnaise and served in a salad, potatoes are one of the most comforting foods I know. There’s something so reassuringly simple and Southern about them. Did you know that you can even save an over-salted dish with a potato?
Meat and Potatoes
As for Michael, he’s a tried and true meat and potatoes kinda guy. The way to his heart is with a good, hearty cut of meat, served with a helping of potatoes and one other veggie. Perfect Mashed Potatoes
At The Lady & Sons, our mashed potatoes is one of our most popular dishes. It’s hard to keep it on the buffet because it’s gone almost as soon as we serve it! We only use nice, red potatoes. To me, they make a better mashed potato than your typical russet potato, but it’s really all about your preference. One secret that I’ll share is that I always leave the skins on. Now that’s not just me being lazy, but the skins hold so many nutrients and they add a whole different layer of texture.
A Sweet Surprise
During the holiday season, one the things I look forward to the most is making Sweet Potato Balls with my dear Aunt Peggy. We have such a hoot cuttin’ up and cooking together. Now most folks make a sweet potato soufflé, but y’all, these sweet potato balls are outta this world, and they’re an unexpected twist that I guarantee your family and guests will love time and time again.
