No-Fuss Recipes from Bubbles

By Susan Greene

Happy New Year, Happy Valentine’s Day, and now the Leprechaun will be popping in with all of his magic dust and pots of gold!

I cannot believe that March is upon us. Usually I prepare corn beef and cabbage for our St. Patrick’s Day meal, but this year I’ve got so much going on that I’ve decided to switch it up a little bit. I wanted to use my crock-pot to make something while I’m running around, and found the perfect recipe. It’s a crock-pot chicken and dumplings recipe, y’all won’t believe how good this tastes!

Here’s the recipe for y’all to try at home:

Crock-Pot Chicken and Dumplings
4 boneless skinless chicken breasts
2 tablespoons butter
1 can cream of chicken soup
1 can cream of celery soup
3 ½ cups chicken broth
1 onion, finely diced
1 cup of carrots, diced
2 chicken bouillon cubes
10 oz. can of biscuits

Put all ingredients in the crock-pot EXCEPT the biscuits.  Cook on low for 8 hours.
About an hour (give or take) before serving, remove the chicken and pull into pieces and return to the soup mixture.

Cut the biscuits into fourths and place the biscuit dough into the chicken mixture and cook until done in the center. Use the whole can!

**Double this recipe and you still will not have any leftovers!

While my Chicken and Dumplings are cooking I am going to scoot over to the soccer game to watch my grandchildren play.  After their games, they’re be coming over to my house, and I’ve decided to let them have a sleepover party. They each going to invite one friend each over, and I’m going to make them a huge breakfast in the mornings. I just love moments like this with my grands. Since they’re soccer players, I’ve decided to make them a hearty breakfast for athletes.

Here’s the breakfast I’ll be servin’:

Breakfast for the Athletes Menu:
Belgian Waffles, Cinnamon waffles, Bacon, Scrambled Eggs and Grits

Recipe for Cinnamon waffles: (They’re so easy!)
1 can of cinnamon rolls found in the refrigerator department of your grocery store.

Cut each roll into 4 equal parts.  Pop them in the waffle iron and cook until done.Drizzle
the icing on while still hot.  Of course, offer syrup and powdered sugar for Belgian and cinnamon waffles!

They’re going to love it!

Love and Hugs,
Bubbles

As soon as you posted this recipe on Twitter, I knew I wanted to make it for dinner. I now have my soup going and the whole house smells delicious. I added a little cilantro to my soup. Talk about easy to make! This is a sure shot and so easy. Thank you!

I have made this kind of chicken and dumplings for years. I roll each biscuit out very thin and then cut them into about 4 strips each. This helps to cook the dumplings all the way thru.
