Mini Cheeseburger Puff Pies

This recipe is as fast as it is delicious. In the 15 minutes you are waiting for these Mini Cheeseburger Puff Pies to bake, you can make out the invitations…to the “Party in Your Mouth”!

Mini Cheeseburger Puff Pies

8 ounces ground beef
2 teaspoons ketchup
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon extra virgin olive oil
All-purpose flour for dusting
1 sheet puff pastry (from a 17.5-ounce package)
2 ounces cheddar cheese, shredded (about 1/2 cup)
1 large egg beaten with 1 teaspoon water


Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper; set aside.

In a large bowl, mix together the beef, ketchup, mustard, salt, and pepper. Form the mixture into 8 equal-size patties. In a large skillet, heat the oil over medium-high heat until shimmering. Brown the patties in oil about 1 minute per side.

On a lightly floured surface, unfold the pastry. Cut the pastry lengthwise into four equal strips, then cut strips in half crosswise. Place one patty on each strip and top with cheese. Fold the pastry up around the burgers and pinch the edges together to seal, molding to fit around the patties. Brush the tops of the pastries with the egg mixture.

Place the mini burgers on the prepared baking sheet. Bake for 12 to 15 minutes or until puffed and golden. Let stand for 5 minutes before serving.

Paula: So glad you have this sight. My wife and I have loved you and your family for years. We aate at your Savanah restaurant several years ago. We hated to see you go through the ordeal you had. I too, after working for 23 yrs 8 months for a company was told I was no longer needed. Anyway, we have prayed for you and your family and will continue to do so. Our church serves a meal for about 50-80 children every Wednesday evening. I've taken on being in charge of these meals for the next year. I think this would be an excellent "cook's choice" meal to serve on a 5th week of the month, that won't strain the already strained budget and the children will love these. But I'm not sure how many mini cheese burgers I'd need to make for that many children. 100 if they each eat 2 is my guess. But would like some input. We usually have 5 lbs of hamburger for one meal for this many children that we make into spaghetti. Do you think 5 lbs is enough hamburger meat?

I decided to make these for a dinner I was hosting for 13 teenage boys. I ended up making 60, thinking I'd have leftovers, and they enjoyed them so much that they ate every last one. I served them with the Lady's Mac and Cheese and a salad. I browned the hamburger patties the night before and layered them between paper towels in the fridge. Then I assembled them a few hours before the dinner and baked them so they were ready right on time. It was pretty easy to make a large quantity and definitely a huge hit!

I have made these with cresent rolls.  Roll out the entire roll and pinch the seams, then cut as in the original recipe.  I have to use realllly lean meat tho, or they come out greasy.

Every time I see a filet mignon it reminds me of one of the best times I ever had with my dad and the proudest I ever felt of him.
My dad was a chef. He worked at various places over the years, from Chicago to Colorado and Michigan. But the year I was 18 he was working at a place called The Beachcomber Club in the Nob Hill section of Colorado Springs.
He invited me and a friend to dinner one night and when it was ready, he personally served us our dinner. He was dressed in his chef’s whites, with his chef hat and the dining room was full. Every single person turned to watch “The Chef” serving our table. He then went around the room and introduced himself to all customers, asked if they were enjoying their meal.
What a great day.

I have all the ingredients except puff pastry. However, I do have a refrigerated pie crust. Do you think that would do in a pinch without compromising the taste or recipe?
