Jamie adores these peanut butter and chocolate balls, and I always used to make them for the boys to give to their teachers as gifts. I remember how proud Jamie was that his mama could make a fine homemade candy.
Ingredients
3 cups confectioners’ sugar
1 cup creamy peanut butter
4 tablespoons (1/2 stick) butter, at room temperature
1 teaspoon vanilla extract
3 cups semisweet chocolate chips
Directions
1. Line a baking sheet with parchment paper.
2. In the bowl of an electric mixer fitted with the paddle attachment, or using a handheld mixer, beat together the sugar, peanut butter, butter, and vanilla at medium speed. The dough should end up slightly crumbly. Roll the dough into 1-inch balls. Place the balls on the prepared baking sheet and stick a toothpick into each ball. Place in the freezer and chill for 1 hour.
3. In the top of a double boiler, or in a bowl snugly on top of a pan with a few inches of simmering water, melt the chocolate chips, stirring until smooth. Holding a ball by the toothpick and placing a fork under the ball to stabilize it, dip it into the hot chocolate, leaving a small hole of the peanut butter dough showing at the top of the ball as the “buckeye.” Let the excess chocolate drip back into the pot. Return the buckeye to the baking sheet. Repeat with the remaining balls.
4. Cover loosely with plastic wrap and refrigerate for at least 2 hours or overnight. Remove the toothpicks before serving.
HOT AND COLD
The secret to getting a nice coating of chocolate on the buckeyes is to make sure the chocolate is very hot and the buckeyes are very cold. I like to bring my buckeyes out of the freezer in batches to make sure they don’t heat up while I’m working.

Hi Paula: I have requested your cook book for Christmas. You are so talented and make me want to be half the woman you are in regards to cooking and decorating... you are a brilliant star in this world. I quit smoking 6 years and 3 months ago. I smoked 2.5 to 3 packs a day. You can do it girl. Just one day at a time. I took on exercise and quit my indulgence in alcohol to keep away from tobacco. I know someone as talented as you can have the determination to beat the monkey on your back. Just think 6 weeks and you will smell your food so much better. Isn't that more than enough to keep it up. Much love :-0

Dearest Paula....I will pray for you during your difficult time of challenges with the smoking. I know you will quit, you have a huge support team that love you very much. I watched you on Dr. Oz and I just wanted to say THANK YOU!!! It is wonderful to see that people can just be themselves and live life. In Costa Rica they have a motto "Pura Vida", literal translation would be "Pure Life", and that is what you represent "Pure Life". You live life to the fullest as we all should. God Bless you, your husband and all of your family. I am not originally from Florida, I was raised in Arizona, but I do enjoy Southern cooking. I love your cooking, its down home. I've cook since I was 5 (or tryed to)I cooked for my mom, who I learned alot from in cooking. We had no fast food joints in our town , so I would dream up recipes for us to eat. probably the best dish mom made is homemade chicken noodle soup (homemade noodles of corse), we would save the chicken parts from the part for frying(back neck, etc.) freeze them for the soup, and dont forget the Idaho mashed potatoes under the soup...Thant you for being you.. Paula, Good afternoon. I just watched you on the Dr. Oz show, and you had made the baked chicken, and usually Dr. Oz has those recipes on his website. I had found the recipe for your macaroni & cheese, but was wondering if I could get the recipe for your baked chicken. Thank you, God bless, and good luck on your endevor of quitting on the smoking. I quit in 2002 because I became terribly sick. My husband quit on March 19, 2010 when he had a heart attack. Hang in there, it is possible, you can do it. You have a lot of "fans" rooting for you. This cookbook is the greatest. I just received it and cannot put it down. I can't wait to try more than a few recipes. Better than I thought it was going to be. I made your cream cheese banna pudding for a family holiday dinner, I must say that everyone loved it and was fighting over who got the last bit.
