Y’all, we love corn, and we love bread. That’s why this casserole has become one of our absolute favorite recipes. It’s so sweet, and it is the perfect side dish to any big family meal. We particularly like to serve it during the holidays, because it’s so easy to throw together. Don’t blame us if your family gobbles this up faster than the turkey!
Corn Bread Casserole with Fresh Corn and Green Onions.
Ingredients:
1/2 cup (1 stick) unsalted butter, melted, plus additional for coating pan
1 cup fresh corn kernels (from 2 ears of corn)
1 15-ounce can cream-style corn
1 cup sour cream
1 8-ounce package corn muffin mix
6 tablespoons thinly sliced green onions
1/4 teaspoon freshly ground black pepper
Pinch salt
Instructions:
Preheat oven to 350 degrees F. Butter a 9-inch square baking pan; set aside.
In a large bowl, stir together the 1/2 cup melted butter, the fresh corn, cream-style corn, sour cream, muffin mix, green onions, pepper, and salt. Pour batter into the prepared pan. Bake for 60 to 75 minutes or until a toothpick inserted in the center comes out clean. Let stand for 5 minutes before serving.

This corn bread cassarole was on our Easter Dinner Table and everyone loved it! Especially me, I am cooking one in the oven right now as I type this. Thank You so much for such a delicious dish. I made this one afternoon about a year ago just to try it out. It was a huge hit! It is very moist and tasty,something a little different.I forgot about it until today when I was looking through my recipe book,it will be on the table tonight!!

This Cornbread casserole recipe is so good!!!!!!!!!!!! I have been making it for my family for the last 10 years and everyone loves it!!! I keep wanting to try it with jalapeno cornbread mix! Bet it would be great! One tip--I find that if you bake it in a aluminum pan it comes out alot better than a glass pan.

Love this corn pudding!! Try leaving out the onions and substituting cayenne pepper for the black pepper. Fabulous!! Can't get enough of it........the edges are the best, all crispy.
