Chill Time Recipes

Beat the heat with a sweet treat. Cool off your summer gatherings with some of Paula’s chilled confections.

Ice Cream Sundae Pizza
1 (21-ounce) package chewy fudge brownie mix
1/2 gallon vanilla ice cream, softened
Caramel flavored ice cream `topping
Hot fudge ice cream topping
Chopped salted peanuts
Maraschino cherries
Whipped cream

1. Preheat oven to 350º. Lightly grease a 14-inch deep-dish round pizza pan.
2. Prepare brownie mix according to package directions. Pour batter into prepared pan, and bake 16 to 18 minutes. Let cool completely. Spread softened ice cream evenly over cooled brownie, to edges of pan. Freeze for 2 hours or up to 2 days. Top pizza with ice cream toppings, peanuts, cherries, and whipped cream. Cut into wedges to serve.

Key Lime Ice Cream Pie
2 cups graham cracker crumbs
1/4 cup firmly packed brown sugar
1/2 cup butter, melted
Key Lime Ice Cream, recipe follows
Garnish: fresh lime slices

1. Preheat oven to 350°.
2. In a medium bowl, combine cracker crumbs and brown sugar. Stir in butter. Press mixture firmly into bottom and up sides of a 10-inch springform pan. Bake for 8 minutes; let cool completely. Gently spread softened Key Lime Ice Cream over crust. Cover, and freeze for 4 hours, or until firm. Cut into wedges to serve. Garnish with fresh lime slices, if desired.

Key Lime Ice Cream
2 cups heavy whipping cream
1/2 cup sugar
2 (14-ounce) cans sweetened condensed milk
1 1/4 cups key lime juice
1 tablespoon key lime zest
1 quart half-and-half

1. In a large bowl, beat cream at medium speed with an electric mixer until slightly thickened. Gradually add sugar, beating until soft peaks form. Add condensed milk and beat until stiff peaks form. Beat in lime juice, lime zest, and half-and-half.
2. Pour mixture into freezer container of a 1-gallon electric ice cream maker, and freeze according to manufacturer’s instructions. If a firmer texture is desired, transfer ice cream to an air-tight container, and freeze for 2 hours, or until firm.

Ooey Gooey Chocolate Ice Cream Cake
1 cup butter
8 (1-ounce) squares semi-sweet chocolate
1 cup sugar
5 large eggs
1/2 cup all-purpose flour
1/2 gallon vanilla ice cream, softened
6 (2.07-ounce) Snickers candy bars, chopped and divided
3/4 cup chocolate sauceGarnish: chocolate sauce and caramel sauce

1. Preheat oven to 350°.
2. In a large bowl, combine butter and chocolate. Microwave at high (100% power) in 30 second intervals, stirring after each, until chocolate is melted and smooth. Whisk in sugar. Add eggs, one at a time, whisking well after each addition. Whisk in flour until smooth. Pour batter into an ungreased 10-inch springform pan. Place pan on a rimmed baking sheet. Bake for 25 minutes. Let cool completely.
3. In a large bowl, combine ice cream and half of chopped Snickers bars.
4. Spread chocolate sauce evenly over cake layer. Spread ice cream mixture over chocolate sauce. Cover and freeze for 4 hours, or until firm. Drizzle cake with chocolate sauce and caramel sauce, if desired. Sprinkle with remaining chopped Snickers bars.

Paula, When I heard what they were doing to you, I was shocked to say the least. I would like to see one person stand up and say that they haven't done or said something in their lives that they wish they could take back. I am so sorry that you are going through these times right now but people LOVE you Paula, so you keep your chin up and keep going girl. I have the Food Network magazine since it came out but I will not renew the magazine and I will let them know why. This world is so crazy and I hear and see filth on the tv daily. You keep God in your heart and forgive these creeps and move on forward in your life because you have always worked hard and you don't need these idiots to succeed. I came to Georgia just to eat at your restaurant and I will do it again one day soon. Love you Paula.

Dear Paula, I have been a fan of yours for many years. You were the reason I started watching the cooking shows on TV. I can't believe they were so quick to let you go because of an obvious attempt of a couple of people to extort money from a celebrity. Just know that your fans and God stand behind you and will never desert you. I know deep in my heart that God has greater plans for you. I hope to see you on TV again soon. Maybe your own station! I hope you make it up to Athens in the near furture. Maybe to watch the Bulldogs play. My daughter is also a huge fan and works in the ticketing office and I'm sure could hook you up with some tickets. We love you and pray for you. Go Dawgs!

I look forward to trying your Ice cream desserts. I love everything you do. I have lots more time to cook now, as I am boycotting all merchants who have dropped you and your products. I will miss the cooking shows, but they obviously do not need my patronage. You have inspired so many and entertained all of us. Paula, I live in Macon, GA and love Savannah but have not had the pleasure of eating in your restaurant which I hope I will be able to soon. I hope that you're able to shake off all this horrible character assassinations that have been dumped on you. Why they're making you a scapegoat is beyond me. I'd love to see you with your own network. Miss you on TV and your positive attitude and big smile and wonderful laugh. I practically have all your books and boy, do I ever make your recipes, esp. the hoe cakes and the strawberry cake with strawberry cream cheese frosting. Glad your furniture line isn't cancelled. Hang in there Paula. A lot of us still want to have dinner with the one and only Paula Deen. Unfortunately, the current events of this country seem to be more than a little one-sided and apparently you are not the only one on trial. It's a very sad state of affairs. When I get down, I always remember a song I sang in a talent contest a long long time ago when I was about 7(made famous by Frank Sinatra). It seems appropriate here: Next time you're found, with your chin on the ground, There's a lot to be learned -- so look around.
