Quick tips for the perfect cheesecake:
A water bath is crucial when baking some cheesecakes. It will ensure that the cake bakes evenly throughout.

Avoid overbeating, which introduces more air than necessary into the cream cheese mixture. This will help prevent cracking. It’s also generally best to have all ingredients come to room temperature before preparing.

Springform pans are a lifesaver when making cheesecakes.

I saw you on food network one day making mini cheesecakes in a cupcake pan, you used a vanilla wafer and then poured in the cheese cake mixture and baked it, then you used cheery pie filling tout on top. I need this recipe to make them, if you could please send it to me. I lost the one I had. Thank You!

paula deen-- i am a 57 yr old man and i love to cook. im also a diabetic (type 2, 15 yrs or so). the things i make i usually have to feed to others so i can maintain my a1c's. i maintain a 5.7 to 6.2 so im not doin bad so dont feel sorry for me, lol. just wanted you to know how i appreciate your handling of your condition. it is frustrating to have to have others tell me how good some of the stuff you make is, but ive been a lifelong auto mechanic so im good at following directions(recipes). i know there is no cure for this, but it can be managed if you work at it. i dont take insulin yet, and hope i can always keep it that way. my best wishes to you and you just keep on keepin on doin what you do. it is almost as gratifying to have people eat your cookin and tell you its GOOD, as it is eatin it. i know you probably dont read all the stuff people send you but i hope this simple message from an even simpler man gets to you somehow. yours truly, tom brown. may god bless you.

Paula, I am also a Type 2 Diabetic, just was diagnosed a couple a months ago. I have always eaten those down home Southern Meals, especially Chicken and Dumplings. I am having a hard time trying to eat right, but I am trying. I will try and eat a grilled chicken salad and it is good, but it does not satisfy my taste. I am 67 years old and do need to lose a good bit of weight. I just want you to know I love all your shows and you are such an elegant lady and I love ya. The thing with Anthony B. made me sick. He has a lot of nerve talking about your food when he smokes like a smoke stack and drinks like a fish. I will never watch another show of his. Even when they show an advertisement on him, I turn the channel. I live in Augusta, Ga. and would love to come to Savannah and meet you sometime. Paula, my husband and I love your show. I married my hubby over 30 years ago. He has Type I Diabetes and so does our beautiful daughter. We watch your show and work together to make the recipes diabetic friendly. Personal responsibility and moderation are the key. Don't stop doing what you're doing girl. We love watching you, your boys, and your guests create that old fashioned feeling of being in the kitchen together. We grew up knowing that love is always made in the kitchen...around the table. Paula, I've loved your recipes for many years & you have a sweatheart of a personality, which I love! My husband has Type-2 Diabetes but I've never quit cooking the recipes of my ancestors. I'm 67 yrs old & just can't give up the 'comfort' food. We cut back on the butter, salt & mainly the portions that we eat, & like you, believe that saying: "everything in moderation"! Stay well, know your limitations, & keep cooking the 'good' stuff! :D
