Bubbles is Back!

SURPRISE Bubbles is back!  I am so embarrassed the last Blog that I gave you was for summer recipes.  Gang it is fall, football, Halloween and soon to be Thanksgiving.  I feel like I have been in a TORNADO TAIL SPIN this summer, but things are slowing down!

I took Collins, Carson, and Cathie to Atlantis this summer and we had a great bonding time with one another.  Just to be with ALL of my girls was so much fun.  We had so many laughs and this will be a trip to be remembered.  We certainly encountered a life changing experience!

Yes, we took THE GREENE FAMILY (40 family members) to St. George Island for a week this summer.  Enough said about this – use your imagination!  I do not even have to start to explain what a WONDERFUL time was had by everyone.  Come on next year – we will never know you are not one of us.  Always the third week in July!

“Take me out to the ball game!” Collins made the C team as well as the Varsity Softball team at Deerfield – Windsor!  They have had a wonderful season.  She has pitched, played outfield, second base and even been the catcher. I’m so glad that she is enjoying her teenage years!  Winning was of course top priority, but the valuable friendships that they have formed will last forever.  I just love those girls!  Whenever I see them there is always a HUG, a great big Smile, and a “HEY BUBBLES”.

Carson is playing soccer EVERYWHERE!  Collins is also on a soccer team.  Needless to say, these travel teams will see Florida, Georgia, and Alabama!  Since the girls play on different age level teams, they are never in the same town for a game.  The mothers really pull it together to get the girls to and from the games.  I do not remember doing all of this traveling when Cathie was growing up. Thanks goodness, she only chose to be a cheerleader!

One of the special days of school for me is GRANDPARENTS DAY.  Let me calculate, Collins has had 8 and Carson has had 5.  The programs are professionally orchestrated and a tribute to a time gone by.  Those of us (Grandparents) in the audience can relate and sing every word!  I left the lower school with a smile on my face and a wee bit teary.  Carson will go to the middle school next year and Collins will go to the upper school.  This was my last GP Day at the Lower School!  My babies are not babies anymore.  Kiran, on the other hand has got a lot to experience.  Sure do miss him and wish we lived closer to watch him grow and change.  Being a Grandparent is such a wonderful experience!

UGA plays Tennessee today!  Thank goodness it will be on National Television.  We did not buy season tickets this year and will be watching from the comfort of our home. Got the kitchen going with lots of FOOTBALL snacks for the fans that drop in from around the neighborhood.  Just heard that familiar scream … TOUCHDOWN GEORGIA! Actually, I do believe that it was my son-in-law, Chad, several miles away.  He bleeds red and black and has ABSOLUTELY no interruptions during a Georgia game!

Marinated chicken wings on the grill, layered Mexican dip, cheese tray, fresh green beans , squash casserole, Beef short ribs in the crock pot, and for the healthy part quinoa vegetable salad!  Dessert is a lemon pound cake with real whipped cream. 

Let me share two of the recipes with you for your next gathering!


Lightly season the ribs with salt and pepper

Dust with flour

Brown the ribs in a little olive oil (healthy) and a generous splash of bacon drippings!  Do not cook the ribs completely.

Transfer the browned ribs to a crock pot and cook on High for 4 hours.

About an hour into the cooking pour your favorite BBQ sauce on the meat.  Stir well and continue cooking!

These will be so tender and I bet you will wish that you had prepared more!

Quinoa Vegetable Salad

Lightly toast 2 cups of 100% whole grain quinoa in about 2 tablespoons olive oil in a skillet on top of the stove.  Less oil is best!

Bring 4 cups of chicken broth to a boil and add toasted quinoa (you will cook this just like rice). This will take about 15 minutes.

While the quinoa is cooking chop one bunch of green onion tops, slice several grape tomatoes, dice a handful of fresh asparagus, dice a ¼ of a red bell pepper, chop coarsely a handful of cilantro, throw in a handful of sliced almonds and a few dried cranberries.

Mix 2 tablespoons of fresh lemon juice, 2 tablespoons of olive oil, and 1 tablespoon of wine or sherry vinegar.  I used a white wine vinegar and it was divine!

Cool the cooked quinoa before combining with liquids and veggies.

Mix the vegetables with the cooled Quinoa and liquid mixture.  Toss and stir.  Refrigerate until ready to serve!

Adjust the veggies and seasonings to your liking!  Add other veggies if you have them on hand.

When Georgia wins the appetites are huge!  Better get to the kitchen quick, looks like a major WIN!

P.S.  Did you know that when you snap fresh green beans you do not take off the PRETTY end? Just pinch off the UGLY end and leave the little curly tip on.
