Bobby’s Lighter Chicken and Rice Casserole

1/2 pound green beans, trimmed and cut into 1-inch pieces
2 teaspoons olive oil
1 (8-ounce) package cremini mushrooms, sliced
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 (10 3/4-ounce) can condensed fat-free cream of mushroom soup
3/4 cup lowfat (1%) milk
2 cups cooked cubed chicken
1 (8.8-ounce) package cooked long grain and wild rice
1/2 teaspoon salt
1/2 cup French fried onions


Preheat the oven to 350°F. Spray a 1 1/2-quart baking dish with nonstick spray.

Bring a large saucepan of lightly salted water to a boil. Add the beans; return to a boil and cook until just crisp-tender, 3 – 4 minutes. Drain.

Heat the oil in a large nonstick skillet over medium-high heat. Add the mushrooms, onion, and bell pepper. Cook, stirring occasionally, until lightly browned, 6 – 8 minutes.

Whisk together the soup and milk in a small bowl. Add the soup mixture to the mushroom mixture, stirring until the mixture comes to a boil. Remove from the heat. Stir in the beans, cooked chicken, rice, and salt. Spoon into the baking dish. Sprinkle the fried onions over the casserole and bake, uncovered, until the casserole is bubbly and the top is golden, 20 – 25 minutes.

Cook Time: 40 minutes

I give this recipe 5 stars. It was so good. I loved it. I varied from the recipe above very slightly. (I substituted a few items. I still used the exact or a variation of the ingredients above). I used 1/2 rotisserie savory chicken from Kroger and 1/4 cup of Daisy light sour cream. Instead of the fat free mushroom soup, I used the healthy heart Cream of Mushroom soup. It was low in fat and had significantly less sodium in it. I used a ham based seasoning for the green beans. Then I seasoned the mushroom, onion, and bell pepper seasoning with a little salt, pepper and garlic powder. After I poured the recipe into the baking dish, I topped it with a little Kraft mozzarella cheese (with Philadelphia cream cheese in it) and 2% Kraft sharp cheddar cheese. (I did not add more salt as the recipe calls for. the soup and the other ingredients had enough flavor to carry the dish.) Then I sprinkled French Fried onions on top. You've got to try this recipe with jiffy cornbread and a light salad. Mmmm. I cannot wait for lunch to eat leftovers!!!!!!!!!!!!

Sounds good - haven’t tried it yet but will tomorrow night.  COuld you put a print link in so that we don’t have to print the whole thing just to get the recipe?  Just a helpful thought.  Had to print 3 pages just to get the recipe that would fit on one page.  THere is probably another way to do this but I don’t know how.
