Ingredients:
4 teaspoons butter
3 McIntosh apples, peeled, cored, and sliced
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice
1/2 (15-ounce) package refrigerated rolled pie crust
2 tablespoons confectioners’ sugar
Directions:
Preheat the oven to 400°F. Spray a large sheet tray with nonstick spray.
Heat the butter in a large nonstick skillet over medium heat until melted. Add the apples, sugar, cinnamon, and lemon juice. Cook, over medium heat, stirring occasionally, until the apples are soft, 10 – 15 minutes. Remove from the heat; let the filling cool 15 minutes.
Cut the pie crust roll into 8 (11/4-inch) pieces. On a lightly floured surface, roll each piece into a 5-inch round. Spoon 2 tablespoons filling slightly off center of each round. Fold each round over the filling to make a half-moon shape. Seal by pressing the edges with the tines of a fork. Prick the top of each pie two or three times to vent. Bake until golden, about 20 minutes. A little of the filling may bubble out. Cool on the baking sheet on a rack 5 minutes. Sprinkle with powdered sugar while still warm. Serve warm or at room temperature.

Bobby, I love watching you, your Mom and Jamie. I would like to know if you are going to have a cookbook of just your lighter recipes? I would love to have a cookbook of nothing but your lighter recipes. I love love love your Mom's cooking! We were in Savannah on Mother's Day and we ate at the " Lady and Sons". OMG! OMG!!! I've written before to tell you how much I love Bobby's Lighter Recipes...I have most of Paula's cookbooks and use them all the time. Especially for a special dish to take somewhere, but I'm at a point in my life where I have to get healthier and loose some weight. Being on Weight Watchers has allowed me to not fear food, but to take control, and as long as I have the nutrition information I'm in control. I have made so many of the receipes you've had on your site and they're HEAVEN!! Especially a strawberry shortcake recipe that was so great and I didn't feel deprived. I've lost almost 20 pounds in the last few months being on Weight Watchers and I've recommended your web site to check out!!I have to admit, at first I raised my hand and said....hey check out Paula Deen's web site...as you can imagine, a few just gave me the eye....ha ha.....and I proudly said...YES, Paula Deen....and continued to share with the group this information. I’ve made the lighter apple pies 3 times now and we all LOVE them! So easy. I use Splenda instead of the sugar - no problem, tastes wonderful! My diabetic husand adores them! Thanks for sharing the wonderful recipe!

My family loves apple pie in any shape.
My tip is to brush the top of crust with milk
then sprinkle with sugar before baking. Makes
a great presentation, and fewer caloeies and less waste than using an egg .

Love fried apple pies. Our little church used to make them as a fund raiser. Cook apples as Bobby did for his recipe but use the regular canned biscuits as crust. Roll out biscuit add filling and fold biscuit over and cremp with a fork. (Like a half moon). Cook in deep fryer turning once. Golden Brown when done. Remove from grease and sprinkle with cinnamon sugar. Everyone loves these.
