Paula Deen’s House Seasoning
2 1/2 lb chicken, cut into pieces
2 cup self-rising flour
1 cup hot red pepper sauce
3 eggs
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
In a medium size bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 1 cup). Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. Approximate cooking time is 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

My son requested this for Superbowl Sunday tailgating. So I made this recipe out of Paula's Southern Bible Cookbook. I wish I would have looked online also. The one in SB doesn't have the hot sauce. Although it was FANTASTIC, the hot sauce would have made it SUPERB!! After I shake the chicken, I do let it sit in the frig for 1 hour to let the flour dry. It tends to make it crispier. Also, I know that the ones that came with my cut up chicken, for the breasts, Paula's cooking times were off for me. My chicken breasts took no less than 25 minutes to get to 180 degrees and my oil was at the right temp. This recipe is a prime example why Paula is Queen of the Kitchen.

I'm very new at cooking for myself so I was nervous about trying this recipe out, but I'd been craving fried chicken and didn't want to go the fast food route. This recipe looked easy (and it was, to say the least!) and I have to say I am beyond impressed at how simple it was to make and how fantastic the results were. My daughter came home and couldn't quit raving about how good this chicken was. I knew Paula would have the best recipe and I was right - thank you Miss Paula, from a grateful and stuffed fan!!!
