8 skinless boneless chicken thighs, trimmed of all visible fat (about 1 1/2 pounds)
1/2 teaspoon Paula Deen’s House Seasoning
1/4 cup light mayonnaise
Zest and juice of 1 lemon
1 egg white
1/2 teaspoon hot sauce
1 1/4 cups cornflake crumbs
Preheat the oven to 375 degrees. Spray a large shallow baking pan with nonstick spray.
Sprinkle the chicken with the House Seasoning. In a large bowl, combine the mayonnaise, lemon zest, juice, egg white, and hot sauce. Add the chicken; toss to coat.
Place the cornflake crumbs on a sheet of wax paper. Dip the chicken into the crumbs pressing so the crumbs adhere. Place the chicken in the pan and lightly spray with nonstick spray.
Bake until the chicken is golden brown and cooked through, 40 – 45 minutes. Do not turn.

You just don’t mess with it…we unanimously decided we would rather just eat fried chicken a little less frequently the way it was meant to be prepared.

The chicken was good but the breading didn't stay on to well! I also added the "house seasoning" to the cornmeal mixture. I also burnt my hand! 8) First time ever while cooking! I love Paula and the Deen boys but I think I'll stick with the old fashioned fried chicken in the grease!

Hi, I was wondering if we can omit or replace the mayo with something else in this unfried chicken recipe? My husband and I do not like the taste of mayo cooked. What do you think?

Paula, I've eaten at your restaurant and I loved it!! However, I have just found out in the last month that I too have Type 2 Diabetes. I am controlling it with diet and excercise and hopefully losing a few pounds. I am so sorry that people have such mean things to say about you "hiding" it. I totally understand trying to get used to it and and change your lifestyle. Besides, it's YOUR business and if you chose to, you didn't have to tell everyone at all. You are a very special lady and I just love you and your family. I would love to see a cookbook come out with receipes for that are very low in carbs for us. I made the chicken for my family this evening and it was a BIG hit!!! We had a big box of corn flakes sitting on the shelf that no one was eating. We will be making this a staple recipe in our house!

Great recipe. I added a few extra spices to my dip mixture. I also added some spicy mustard to give it some extra kick. I used boneless chicken and it took about 30 minutes. Very easy dinner and super tasty. Definitely adding this recipe to my list of favorites!! Recommend trying.
